Dangerously Sweet - Triple Chocolate Zucchini Cake

Miesha "Cupcake" Tate is Dangerously Sweet.

2 cups all-purpose flour  
3/4 cup unsweetened natural cocoa powder
2 teaspoons baking soda 
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup canola or vegetable oil
1 cup granulated sugar or substitute (BochaSweet or Erythritol)
3/4 cup packed brown sugar or coconut sugar
4 eggs
1/3 cup sour cream or plain yogurt
2 teaspoons pure vanilla extract
3 cups shredded zucchini (about 3 medium)
1 cup semi-sweet chocolate chips


  1. Preheat oven to 325 degrees. Grease and flour (2) Fat Daddios' 6x3-inch square cake pans. 
  2. In a large bowl whisk the flour, cocoa powder, baking soda, baking powder, and salt together.   
  3. In a stand mixer beat together oil, sugar, brown sugar, eggs, sour cream, vanilla, and zucchini until combined.    
  4. Add dry ingredients and beat on medium speed until mixed.    
  5. Beat in chocolate chips. Batter will be slightly thick.  
  6. Pour batter evenly in to both cake pans or until 2/3 full. Bake for 40-45 minutes or until a toothpick/knife inserted into the center comes out clean. 
  7. Cool completely before removing from pan.

Frosting and Assembly:

1 lb butter
2 lbs confectioners' sugar
1 cup cocoa powder
Vanilla bean to taste

Using a stand mixer, beat the butter on medium speed until creamy, about 2 minutes. Add confectioners' sugar, cocoa powder, and vanilla bean. Beat on low speed for 30 seconds, then increase to high speed for 2 minutes. Add 1 Tablespoon of heavy cream or milk if frosting is too thick.

Using a Fat Daddio's serrated cake knife (CK-10), slice each cake into 2 equal layers. Place 1 layer on your cake stand or serving plate. Evenly cover the top with frosting. Top with the 2nd layer and repeat with layer 3 and 4. Spread the remaining frosting all over the top and sides. Use a Fat Daddio's bench scraper (BS-57), or Offset Spatula to smooth the sides and top. Sprinkle the top with cocoa powder and garnish with chocolate pieces or chocolate chips.
