Peanut Butter Cookies Recipe

Peanut Butter Cookies

All-purpose flour, 400 grams
Baking soda, ½ tsp
Salt, ¼ tsp
Baking powder, 1 tsp
Butter, 8 oz
Granulated sugar, 210 grams
Brown sugar, 215 grams
Eggs (beaten slightly), 2 ea
Peanut butter, 450 grams
Vanilla, 1 tbsp

Makes about 7 dozen cookies.

Sift flour, baking soda, baking powder and salt. Cream butter and sugars until blended but not fluffy. Beat in eggs, peanut butter and vanilla. Mix thoroughly. Add flour mixture. Knead to form a smooth dough. Divide dough in to 4 parts. Roll each part into a roll about 1 inch in diameter. Cut into 1 inch lengths. Roll these pieces in the palms of your hands to form smooth balls. Lay on ungreased cookie sheet, 1 inch apart. Press dough with fork to make criss-crosses. Bake in oven at 375 degrees F for 10–12 minutes.
