Royal Icing Recipe

Everyone needs a good royal icing recipe on hand. Whether you're decorating cookies for the holidays (big or small), or adding a little extra flourish to cakes or pastries, a simple royal icing recipe becomes invaluable. This one is fast, easy and will speed you right into the fun part of decorating!
Royal Icing
3 tablespoons Fat Daddio's Meringue Powder
1/2 cup warm water (or more, if needed, depending on consistency)
1/2 teaspoon vanilla (or other) extract)
4 cups confectioners' (powdered) sugar
Food coloring gel (optional)
  1. In a medium bowl, and using the paddle on an electric mixer or hand mixer, combine meringue powder and powdered sugar on low. Add the water and flavoring and beat on medium or high speed for roughly 5 minutes, until the royal icing is smooth and glossy. Depending on what consistency you're looking for, add more powdered sugar to make it stiffer, or more water to make it thinner.
  2. Use immediately. Keep unused portions covered with a wet paper towel pressed up against the surface of the icing. This keeps the icing from crusting.
  3. Place unused icing in an airtight container with a wet paper towel or resealable plastic bag and store in the refrigerator or at room temperature.
