You already know how you want to fill the pie. Apples, sugar, cinnamon, a squeeze of lemon, done. What you may not have is a dough you trust, because the pastry is almost always where an apple pie goes wrong. Ratios stay constant across all sizes: butter at 70 percent of flour weight, water at 30 percent, vinegar at 2.5 percent, salt at 2 percent, sugar at 3.75 percent. Larger pies need 10 to 15 minutes longer at the reduced temperature; smaller pies need 10 to 15 minutes less.
Make Ahead and Freezing
A large share of apple pie baking happens in the two days before a holiday, and this dough is genuinely better when it is made ahead.
