There is one failure that keeps people from baking carrot cake in a bundt-style or ring pan, and it is not a mystery. You run the knife around the rim, invert, lift, and the crown of the cake stays behind in the flutes. This bundt-style carrot cake recipe was developed to remove that risk entirely, and the fix is not a better greasing technique. It is the pan.
Carrot cake batter is the worst possible candidate for a narrowly fluted decorative mold. Shredded carrot and chopped nuts bridge across fine channels, so the batter never fully seats into the pattern, and the sugar and oil that do reach the wall caramelize into every seam and cast line and weld there. So we bake this cake in a smooth-walled, straight-sided anodized aluminum ring mold, and we give up the pattern on purpose. What you get in exchange is a handsome plain ring with a set cream cheese glaze, a fully baked center, and an empty pan every single time.
Why a Carrot Bundt Sticks, and Why It Is Not Your Greasing
Sticking in a heavy, chunky batter is a geometry problem before it is a fat problem. Three things are working against you in a decorative pan:
– Bridging. Coarse carrot shreds and nut pieces span narrow flutes instead of settling into them. Air pockets form at the pattern, the crust there is thin and fragile, and it tears on inversion.
– Seams and cast lines. A high-sugar, high-oil batter caramelizes at the wall. On an uninterrupted vertical face that caramel layer releases as one sheet. Inside a fluted or seamed pan it has hundreds of mechanical anchors.
– Depth. A ring cake three inches deep is heavy. The crumb has to carry its own weight the moment you turn it over, and it will fail wherever the wall is thinnest.
A smooth-walled ring mold reduces the release to one variable: a continuous film of fat and flour on a straight wall. That is a mechanical certainty rather than a gamble. The center tube does the second half of the work by giving the dense middle of the batter a heat source it otherwise does not have, which is exactly what a deep carrot batter needs to set through without the outer half going leathery.
Material matters here too. A light anodized aluminum ring mold reflects radiant heat rather than absorbing it the way dark coated steel does, so a spiced, sugary batter can sit in a moderate oven for the long bake a three-inch center requires without the wall crust hardening first. One note of honesty: anodized aluminum is a hardened surface, not a nonstick coating. It must be greased and floured, it should never be cut or scraped inside, and it should be hand washed and dried rather than run through a dishwasher.
Measure Your Pan Before You Mix Anything
Ring pans of the same stated diameter can differ by two or three cups of capacity depending on wall height and core width. Do not assume. Do this first:
- Set the empty, dry pan on the counter and fill it to the very brim with water from a liquid measure, counting cups as you go.
- Write the number down. That is your measured capacity.
- Multiply by 0.66. That is the maximum batter volume for this cake in your pan.
The 8 1/2 in x 3 in anodized aluminum ring mold (RMP-9) this recipe was developed in holds about 10 1/2 cups (2.5 L) to the brim, which puts the working fill at roughly 7 cups (1.65 L). The recipe below makes 6 1/2 to 7 cups of batter, so it fills that pan correctly with a small margin of safety.
Never fill a ring mold past two-thirds of measured capacity. A batter this rich rises late and slowly. Overfilled, it domes over the rim, seals the pan, and leaves you cutting a mushroom off the base before you can invert anything.
Oil-Based and Mixed by Hand
A creamed butter batter whips air into the mix, which in a deep ring produces a high dome that cracks and then collapses as it cools, leaving a compressed band under the crust. Oil carries no air. It gives you a level rise, a tighter crumb with more structural integrity at the wall, and a cake that stays sliceable straight out of the refrigerator instead of firming into a cold brick. It also means one bowl, one whisk, and no mixer.
The Carrot Question: Fine Shreds, Grated by Hand
This is the second most common cause of a failed ring cake, and almost nobody says it out loud.
– Fine or medium box-grater shreds are thin and wet. They give up their moisture into the surrounding crumb during the bake and essentially disappear, leaving color, flavor, and a tight, continuous crumb.
– Thick food-processor shreds and bagged pre-shredded carrots are coarse and comparatively dry. They stay intact, and each one leaves a tunnel or void behind it. Multiply that by three cups and you have a ring cake riddled with weak points at exactly the moment it has to support itself upside down.
Grate by hand. It takes six minutes and it is the difference between a clean cross-section and a crumbly one.
Pineapple, Raisins, and Coconut: Take a Position
Every family has an opinion, so here is ours. In a deep ring cake, every add-in that carries free water is a structural liability. Crushed pineapple, even drained, keeps releasing juice into a crumb that already has three cups of carrot in it, and the result is a gummy band around the core and a wall too soft to release cleanly. Raisins do the opposite and then the same thing: they draw moisture out of the crumb around them, then weep it back on cooling. In a sheet cake, fine. In a three-inch ring you are about to invert, neither is worth it.
The one sanctioned variation: fold in 1/2 cup (40 g) unsweetened flaked coconut that has been toasted at 325° F (163° C) until golden and cooled, and reduce the carrot to 2 3/4 cups. Toasting drives off the coconut’s moisture and makes it inert in the batter, so you get the flavor without softening the wall.
Ingredients
Makes one 8 1/2 in x 3 in ring cake, 12 to 16 slices
For the cake
– 2 3/4 cups (330 g) all-purpose flour
– 2 tsp baking soda
– 1 tsp baking powder
– 1 tsp fine sea salt
– 2 1/2 tsp ground cinnamon
– 1 tsp ground ginger
– 1/2 tsp freshly grated nutmeg
– 1/4 tsp ground allspice or cloves
– 1 1/2 cups (300 g) granulated sugar
– 1/2 cup (110 g) packed light brown sugar
– 1 cup (215 g) neutral oil, such as canola, grapeseed, or refined sunflower
– 4 large eggs, at room temperature
– 1 Tbsp pure vanilla extract
– 3 cups (300 g) carrots, hand grated on the fine or medium holes of a box grater, lightly packed, not squeezed dry (about 5 to 6 medium carrots)
– 3/4 cup (85 g) pecans or walnuts, toasted and chopped to roughly 1/4 in (6 mm) pieces
For the set cream cheese glaze
– 4 oz (113 g) full-fat block cream cheese, softened to room temperature
– 1 1/2 cups (170 g) confectioners’ sugar, sifted
– 1/2 tsp pure vanilla extract
– Pinch of fine sea salt
– 1 to 3 Tbsp heavy cream or whole milk, added by the spoonful
Use block cream cheese only. Tub-style spreads carry added water and gums, and a glaze made with them will never stop moving on the slope of the cake.
Instructions
- Prep the RMP-9 Ring Mold pan first, while it is cool. Using a pastry brush and solid vegetable shortening or softened butter, coat every square inch of the interior: the floor, the outer wall, and all the way up the center core. Add 2 tablespoons of flour, tilt and rotate the pan until the film is completely coated, then invert and tap out every loose grain. Any bare spot you can see is where the cake will grab.
- Preheat the oven to 325° F (163° C) with a rack in the lower third. If you are using convection, drop to 300° F (149° C). A moderate oven is not a suggestion here. A hot oven sets the wall long before the three-inch center is cooked.
- Grate the carrots by hand on the fine or medium side of a box grater. Measure 3 cups lightly packed. Do not wring them out. That moisture belongs in the crumb.
- Toast the nuts on a sheet pan at 350° F (177° C) for 7 to 9 minutes, cool, then chop. Toasting drives off moisture and keeps the pieces from softening into wet pockets.
- Whisk the dry ingredients together in a medium bowl: flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and allspice.
- Build the batter in one large bowl. Whisk both sugars, the oil, the eggs, and the vanilla by hand for about 45 seconds, until the mixture is smooth, glossy, and slightly lightened. Stop there. You are emulsifying, not aerating.
- Add the dry ingredients all at once and fold with a flexible spatula until only a few dry streaks remain.
- Fold in the carrots and nuts with 15 to 20 strokes, until evenly distributed and no flour is visible. The batter will be thick and heavy. You should have 6 1/2 to 7 cups.
- Transfer to the prepared pan and level the top with an offset spatula, keeping the batter slightly higher against the outer wall than at the core. Tap the pan gently on the counter twice to settle it. Confirm the fill is at or below two-thirds of your measured capacity.
- Bake for 60 to 75 minutes, rotating the pan at the 45 minute mark. Do not open the oven before then.
- Test for doneness by internal temperature, not by skewer. Insert an instant-read probe halfway between the wall and the core and look for 205° to 210° F (96° to 99° C). The cake should also have pulled back a hair from the outer wall, and the top should spring back under a fingertip. A skewer will come out damp from wet carrot shreds in a perfectly baked cake, which is why so many carrot bundts get overbaked into dryness.
- Rest the cake in the pan on a wire rack for exactly 15 minutes. This window matters. Less than 12 minutes and the crumb has not firmed enough to carry its own weight. More than about 20 and the cooling sugar at the wall begins to grip. Do not run a knife around the rim, which only tears the crust you are relying on.
- Invert onto the rack. Set the rack over the pan, flip in one motion, and lift the pan straight up. Cool completely, 2 to 3 hours, before glazing.
- Make the glaze. Beat the softened cream cheese alone until perfectly smooth with no lumps. Add the confectioners’ sugar, salt, and vanilla and beat until thick and pasty. Add cream one tablespoon at a time until the glaze falls from the spatula in a ribbon that holds its shape on the surface for 3 to 4 seconds before sinking back. That is the target consistency. Thinner than that and it will run to the base of the cake and pool.
- Glaze and set. Spoon the glaze around the crown of the ring and let gravity pull it down the slope. Give it 20 to 30 minutes at room temperature to set before slicing or transporting.
Scaling Into Other Ring Sizes
Work from measured capacity, never from stated diameter:
– Capacity x 0.66 = batter needed.
– 8 to 9 cup pan: use about 5 1/2 cups of batter, which is roughly three-quarters of this recipe. Bake 50 to 60 minutes at 325° F (163° C).
– 10 to 11 cup pan: the full recipe as written. Bake 60 to 75 minutes.
– 12 to 15 cup pan: multiply the recipe by 1.5 and bake 75 to 90 minutes, tenting loosely with foil if the crown colors before the center reaches temperature.
In every case, the doneness target stays 205° to 210° F (96° to 99° C). Bake any leftover batter in a small loaf or a few cupcakes rather than overfilling the ring.
Storage, Make-Ahead, and Transport
– Unglazed, at room temperature: wrap the fully cooled cake tightly in plastic and hold for up to 2 days. The crumb improves on day two as the spices bloom.
– Glazed: store under a cake dome at cool room temperature for up to 2 days, or refrigerate up to 5. Because this is an oil batter, it slices cleanly cold.
– Freezing: wrap the unglazed cake in plastic, then foil, and freeze up to 3 months. Thaw overnight in the wrapping at room temperature, then glaze the day you serve.
– Transport: glaze at least 30 minutes before you leave so it sets, then carry the cake on a flat board inside a covered carrier. A set glaze survives a car ride. A full cream cheese frosting does not, and it slumps down the sides and hides the clean ring shape you chose this pan for in the first place.
Pan Care
Wash the anodized aluminum ring mold by hand in warm water with a soft cloth or sponge and dry it immediately. Skip the dishwasher, abrasive pads, and metal tools inside the pan. Treated this way, the surface stays smooth and the release stays predictable for decades of baking.
